Cheese Processors make up the largest number of processors in our network today and is a core strength. Breaking up the pie further, we know that mainstream cheese and artisanal type cheeses make up 50% of the portfolio. We continue to see growth in ethnic (Hispanic and Indian) cheese categories which are opportunity areas to pursue as we look ahead to the upcoming months.
