Bioplastics from whey

The project consists of producing a compostable bioplastic resin through fermentation of delactosed whey permeate. The resin would then be processed into films or containers as an alternative to traditional plastics. The current study is focused on optimizing the fermentation process and is in progress at UC Davis. CDIC is working with UC Davis lead researcher towards the development of potential grants, and industry partnerships, to scale up the process, and optimize utilization. The project is co-funded with, and supervised by, Dairy Management Inc.

Continuing Education

April 11-12, 2023 - Advanced Cheesemaking Dairy Products Technology Center, CalPoly, San Luis Obispo

This workshop featured extensive hands-on cheesemaking in the pilot plant, and introduced students to fresh/farmers cheese, parmesan, gouda and global cheese varieties. A total of 23 representatives from industry participated in the short-course. The course was sponsored by Hilmar Cheese Company, the Pacific Coast Coalition, DMI and CDIC.

Short-courses planned for Q2/Q3 2023 :

June 21-22 - Hispanic Cheeses Dairy Products Technology Center, CalPoly, San Luis Obispo, in collaboration with Fresno State and International faculty Attendees will learn about the major varieties of Hispanic cheeses, their manufacture, characteristics and applications. CDIC collaborated with Fresno State and CalPoly SO in the development of the curriculum, selection of instructors and promotion of the event.

September 19-20 - Frozen Desserts Innovation - from gelato to novelties Dairy Products Technology Center, CalPoly, San Luis Obispo

This workshop will explore hot industry trends and participants will learn how to formulate base mixes to achieve nutritional and product targets. Fundamentals of mixing and freezing. The courses will feature hands-on manufacture of innovative formulations in the pilot plant – from new gelato to hydration frozen desserts.
