Fruity Milks – Initial screening of “fruity” milks containing 10-45% fruit purees was conducted at CalPoly, San Luis Obispo. The project is designed to develop turn key concepts for a variety of ESL and UHT milk-based beverages and to expand the industry’s product portf olio. Purees and fruit juices can be added as natural flavoring and sweetening agents in “no sugar added” formulations. As part of the project next seps, a number of ingredients to manage pH (acidity) and texture/ stability over the expected shelf life of the product is to be tested.

CDIC is working with the North American Blueberry Council for a partnership towards the development of a “Real Blue Milk” and potential other collaborations for student entrepreneurship programs.

In collaboration with the Business Development Team, CDIC worked on the Fall Entrepreneurship – Product Development class at Chapman
which will focus on the development of innovative concepts of milk-fruit beverages. This program is funded directly by Dairy Management Inc., with DMI staff participating in student mentorship and it will focus on insights from DMI’s Health and Wellness consumer studies. Extruded Snacks for Pets with Real, “upcycled” cheese. CDIC met with CalPoly Pomona faculty and worked on the outline of a project which will test the feasibility of including real cheese (25-35%), as the primary ingredient in extruded
pet snacks. The extrusion capability and faculty availability is new at CalPoly Pomona. The product formulations will include cheese trim, a lower value product and is conducted with the collaboration of a California cheese processor. The project is advised by staff from a national pet products brands for veterinary requirement, other regulatory matters and potential adoption.

Calming/Sleepy Milks – CDIC worked with the CalPoly SLO team to screen over 15 potential functional ingredients for the formulation of “calming” milks, based on health benefits/potential claims, and regulatory status. Potential product development is scheduled in Q4.
