Supported by the dynamic bakery market, whipping cream continues to be one of the strongest dairy categories in China with over 256,000 MT importation annually. EU products still suffer from the sharp price increase due to the war in Ukraine. Domestic production capacity is only at 50,000 MT. Buyers are looking for new products to make up for the short supply. Modified/Flavored fresh milk is becoming a new trend in the China market. All the dairy leaders including Bright Dairy, New Hope, Mengniu, and Meiji have launched pasteurized flavored milk this year including peach, taro, milk candy, etc., taking a fresh and premium approach. CMAB conducted a demo class with Cal Cheese Lecture from Chef Mark Todd to professors and student chefs from Guangzhou Vocational School of Tourism and Business. Founded in 1981, the school now hosts 4,500 students including 400 from the culinary faculty. After the demo class, the school will launch California Dairy Curriculum.

World Bread Competition (southern regional contest) was hosted in Dongguan, Guangdong in March. Chefs created recipes for sandwiches and burgers highlighting the Mozzarella shreds, Calico cheese slices, cream fraiche, and cream cheese from California. CMAB China Rep also introduced the product via the live streaming facing over 30,000 professional audiences online.
