Fancy Food Show 2022
The CMAB had a highly functional Booth at the Fancy Food Show in Las Vegas February 6- 8. We had a comprehensive offering of multiple dairy categories including A2A2 Fluid Milk, Mediterranean Dairy Products, Specialty Cheese, Paneer Cheese, Kefir, Drinkable Yogurt, Hispanic Cheeses, Whey Butter, Snacking Cheese, and Ice Cream/Gelato. The show traffic was robust, and our Processor Partners received orders and calls for new distribution of their new items, making it a very worthwhile show.

Project Collaboration 2022
Project Collaboration combines resources and processing capabilities from multiple sources to make new dairy products. This is a long-term, ongoing project which involves convincing processors why and how they would collaborate with the CMAB and/or other processors to make items they otherwise are incapable of making. It takes time to put all the pieces together. Thanks to the California Dairy Innovation Center (CDIC), we have a several projects under way, including development of healthy, protein packed, low sugar, lactose free, ice creams and drinkable yogurts and still have a premium milk item on our radar. Convincing processors with the data we have access to is key to making these projects a reality, as many processors are production driven, but we have a lot of interest in the concept and the items. This fills a void many processing companies have due to small staffs and a lack of resources to hire marketing and product development teams.
