2022 Strategy Review

The California Dairy Innovation Center launched the implementation of tactical elements aligned with its key strategies:

I. Driving Export Sales

Extending Shelf-Life to Reach Export Markets

CDIC seeks to explore technologies to extend the shelf-life of fresh dairy products, which include bulk shipment of fresh fluid milk under pressure; as well as the benefits/costs and the safety of high-pressure technology as an additional process for shelf-life extension. The potential advantage of these alternative or supplemental technologies is their lower cost compared to traditional ESL installations, suitability to small manufacturing plants, and shorter supply chain (farm

to container). From the customer perspective: they guarantee excellent nutritional profile and fresh organoleptic characteristics. Suitability of these technologies for the California dairy industry are being evaluated.

Filling Processing Gaps: A Feasibility Study

CDIC, in collaboration with other CMAB departments, is developing the outline of a study that would examine processing capacity gaps in the State. The study intends to ascertain that the availability of one or more, flexible dairy plants would effectively support the diversification of the industry’s product portfolio. It would evaluate specific product gaps, and examine various models, including

partnerships with academic institutions, to allow for cost-sharing of infrastructure,
