NUTRITION AND HEALTH ProCream as a Source of Bioactive Compounds for Human Health BACKGROUND: Whey protein production results in several novel and nutrient-rich dairy byproducts. Many of these byproducts, such as ProCream, have yet to be explored for their economic and nutritional value. OBJECTIVES: To identify the composition of ProCream, determine its health effects, and to add value to this byproduct/waste stream. INDUSTRY BENEFIT: Reduced waste streams, better understanding of dairy-derived health benefits, creation of added-value ingredients and products.
